Apple Cake

Don't get caught off guard by the title of this recipe. This dessert is very different than most American cakes. The abundant amount of apples are coated with a minimal amount of batter which is made of yeast and whipped egg whites.

A touch of cinnamon and a powdered sugar glaze enhances the results of this unusual but delicious Italian "cake."

RECIPE INGREDIENTS
2 large egg yolks
1/3 cup all-purpose flour
1 tablespoon sugar
Pinch of salt
1/6 oz dried yeast
 1/4 cup milk
2 lb apples, peeled and thinly sliced
2 large egg whites


DIRECTIONS

Butter a 10-inch diameter cake pan. Preheat the oven to 325 degrees F. Beat the egg yolks in a large bowl. Mix in the flour, sugar, salt, yeast and milk. Add the apples and stir to coat. Using an electric mixer with clean dry beaters, whip the egg whites in another large bowl until stiff peaks form. Gently fold the beaten egg whites into the apple mixture.
Immediately transfer the mixture to the prepared cake pan and bake until a skewer inserted into the center of the cake comes out dry, about 45 minutes.
Allow to cool before serving.
